Cocoa liquor, also known as cocoa mass, is a paste made from the beans of the cacao tree. It is the main ingredient in chocolate and chocolate confections. Cocoa butter, another component of chocolate, is extracted from cocoa liquor.

Cocoa liquor contains both cocoa solids and cocoa butter in varying proportions. The ratio of cocoa butter to solids affects the meltability, hardness, and flavor of the final chocolate. The higher the percentage of cocoa butter, the more readily the chocolate will melt in your mouth.
